- 1 kg onions (sliced in rings)
- 1 1/2 liter water
- 2 cubes vegetable stock
1) Fry the onions in a large pan for about 15 minutes until caramelized. Add a little bit of water to prevent sticking.
2) Boil 1 1/2 liter water in a kettle and pour over the onions. Bring to the boil and simmer for 45 minutes.
3) Scoop the soup in bowls and season with pepper. If you want to impress with French onion soup, drop a slice of french bread in the soup, topped with Vegan cheese and put the soup bowls under a hot grill for about 5 minuted to melt the cheese.
